Fromager D'Affinois Double Cream Cheese

Fromager D'Affinois is an ivory double cream cheese with a smooth, runny texture, and a firmer core. This almost creates a double texture within the same cheese, making for a unique texture. The outer rind is edible and even enhances the full experience of the flavor. Every bite is mild with soft notes of mushroom and a touch of saltiness.

Many compare this cheese to a Brie due to the similar production style, look, and flavor. However, this is a unique cheese. The Fromagerie Guilloteau uses an ultrafiltration process, a technique they’ve pioneered. Before making the cheese, this process removes water from the cow’s milk, and concentrates all of the components left . By doing so, this allows the cheesemaking process to proceed at a much more rapid pace - a brie takes eight weeks mature whereas Fromager D'Affinois only takes six. Because of the retention of nutrients, this brings the fat content in the cheese up to 60%. This cheese is truly an amazing accomplishment and has made it one of the most desired cheeses in the world.

Located in the Rhône-Alpes region of France, Fromagerie Guilloteau opened in 1983 after cheese lover and pioneer Jean-Claude Guilloteau couldn’t keep up with demand in the small town of Pélussin. To this day, the company still regularly site visits all of their local farmers to ensure the quality of the milk that goes in their process. Their local farmers only have an average herd of fifty cows, and these mountain-bred cows are known for their high-quality, protein-rich milk.

Because of its Brie-like nature and heavy fat content, Fromager D'Affinois - 60% can be used much like a Brie in many recipes. A: This cheese is imported from France, but shipped from our facility in California. The 4.4 lb wheel is the only size we carry.
