Fermented black beans, also known as Chinese Fermented Black Beans, are nothing like regular black beans. To start with, they're actually black soybeans that have been dried and fermented with salt. The flavor is strong and dense, bitter and delicious in small quantities, and they're typically found in Cantonese dishes. Great with stir-fries, especially when ginger and garlic are used. Rinse them beforehand to reduce the salt, and use sparingly.
