Rule number 1 of a proper chef’s pantry is: one can never have too many vinegars. Well, there’s no such rule, but we’re of the mind that a great pantry can never be lacking various vinegars, and this is one to stock up on: Edmund Fallot’s White Wine Vinegar with Walnut. This is not a walnut vinegar, but a tangy and bright white wine vinegar that’s aromatized with walnuts from the Perigord region of France.
Use this fine vinegar to create delicious salad dressings and vinaigrettes, or to finish grilled and roasted meats, fish or poultry. The addition of natural walnut flavor makes for a nuanced condiment, with deep nutty notes that contrast beautifully with the white wine. Add a splash to sauces for depth and try it in a marinade. It will make a wonderful bearnaise sauce, and a splash or two on mashed potatoes or potato salad will brighten it to new heights. In braising, it will add a nice acidity and nutty note.
The Fallot Mustard Mill is the last independent ‘Burgundy Moutarderie’ (that’s ‘mustard mill’ to us). Still housed on its original premises in Burgundy, France, Edmond Fallot is a family-owned business established in 1840. They are proud and protective of the Dijon tradition, and are the only Dijon producer that still uses the traditional stone mill method to make Whole Grain Mustard.
