Sourced from Karat, one of the oldest Osetra aquaculture farms located in Israel. Obtained from sustainably farmed authentic Russian Osetra Sturgeon. Imported fingerlings from the Caspian sea are raised in their state-of-the-art fishery located in Israel. Considered one of the finest examples of modern aquaculture, Karat’s fishery is filled with spring water from the peaks of Mt Horeb. As the natural springs make their way down the mountain and into the Jordan, Karat’s aquaculture ponds are fed directly from the river. Constantly refreshed and replenished with virgin water, the continual movement oxidizes and further purifies the ponds.
