Giant Gigante Beans in Vinaigrette

These plump and meaty white beans from Greece are the perfect addition to an antipasto platter and salads. They can be easily turned into creamy dips or eaten as a snack on their own. Gigante is Greek for giant, and these beans are definitely perfectly and satisfyingly oversized.

The naturally mild and buttery beans are marinated in a flavorful vinegar and extra virgin olive oil mix with strips of red pepper, sea salt, pepper and parsley. We love to toss them into pasta salads, but we also adore them for simple snacking, paired with a fresh baguette to soak the vinaigrette. Take a blender or food processor and easily puree to create a hummus-like dip that you can serve as a healthy creamy starter served with fresh veggies like carrots and celery. Serve them as a side dish with meats and grilled fish, so versatile!

Q: Can the giant gigante beans be frozen.
A: Yes, the beans can be frozen after the can is opened. They need to be transferred to a different container for freezing though.

Q: How long can they keep once opened?
A: After opening the beans have to be kept refrigerated. They will last up to 2 weeks as long as the remain covered in the vinaigrette. The contents can also be transferred to a different type of container (glass, tupperware, etc.) for easier, airtight storage.
