Aptly monikered “cannonballs”, these little ball-shaped cheeses from Capriole Creamery in Indiana are powerballs of goat-y flavor. Wabaash is an aged goat cheese ripened under a cover of vegetable ash on the wrinkly rind. The flavor of this ash goat cheese is citrusy and bright, with a pleasant spiciness and tang, and the texture is dense and soft, getting dried and crumblier as it ages.
Pair Wabash Cannonball cheese with anything sweet: a perfectly ripened peach dripping in juice, a drizzle of honey or a wedge of honeycomb, and add a glass of sweet dessert wine or a sweet lemonade.
Capriole is located in Indiana amongst verdant rolling hills and the Ohio River. Legendary cheesemaker Judy Schad and husband Larry amassed a herd of friendly organic goats, and started developing what would later become award-winning goat cheeses.
