Made from organic Ayrshire cow’s milk, Maia develops a fudgy, custardy texture as it ages, with flavors that evolve into a wonderful mix of clotted cream, guava, and even hints of bacon. Slightly yeasty, with a soft, funky aroma, this cheese is rich and complex, begging to be paired with a full-bodied wine or a craft beer.
