Blonde Chocolate is a special blend recently discovered and developed by Valrhona chefs. It is a 32% cacao solid couverture prepared similarly to white chocolate, though the process is much longer. This extra time leaves the chocolate with unique flavors of caramelized milk and biscuits, and hints of salt and butter.

Because of its unique preparation, blonde chocolate is ideal for moulding, ganache, cremeux, bonbons, and making patisserie. It blends remarkably well with both warm flavors like caramel, coffee, and hazelnut; as well as light and sweet flavors of apricot, mango, and banana.

Valrhona, a French chocolatier since 1922, is proud to offer this new chocolate, and hopes it will inspire chefs around the world to continue to push their creative boundaries.
