Urfa Biber Peppers are a Turkish Chili Pepper specific to the Urfa region. They are also known as Isot Peppers. In terms of flavor, Urfa Biber peppers are more mild than many peppers, but their heat builds slowly and is longer lasting. A similar pepper, the Aleppo Pepper, is grown in a nearby region and has a comparable level of heat.
These dried Urfa Biber Turkish Pepper Flakes are coarse ground chili pepper flakes, dark burgundy to almost black in color. Urfa Biber Chilis have a smoky, raisin-like fruity taste that also hints at earthy and bitter chocolate and tobacco flavors. Their large size, complex flavors, and high oil content provide a satisfying chewy texture and taste. To harvest these peppers, they are allowed to ripen to a dark burgundy on the vine. Then they are put through a “sweating” process in which they are sun-dried during the day and wrapped up at night. This process infuses the drying peppers with moisture and flavor.
Urfa Biber Pepper Flakes are common in Turkish cooking. They can be used to compliment meats, roasted vegetables (especially eggplant), cheese (especially feta), and rice dishes. They are commonly used on kebabs. They can also be used in sweet spicy dishes when combined with vanilla, ginger, chocolate or blended into a fruit chutney.
