Pleasant Ridge is an Alpine-style cheese modeled after Gruyere, and made from seasonal cow's milk. It is made exclusively during the summer, when the cows feed on nutrient-rich fresh grass. The milk in turn becomes flavorful, filled with rich and lingering grassy notes. Pleasant Ridge is aged for two years, developing creamy, nutty flavors, and a milky finish. It grows more complex and delicious with age.
