We take the crust off the traditional quiche for a light and fresh alternative. Our smoked salmon mini quiche are a lovely AND delicious appetizer that's surprisingly easy to make, and ideal for spring brunches, bridal showers, and of course, the ultimate spring celebration, Mother's Day.

Smoked Salmon Quiche Appetizers Recipe Instructions

Ingredients

  • 3.5 oz. smoked salmon, finely chopped
  • 11 oz. cream cheese
  • 3 large eggs
  • 2 tbsp. chopped chives
  • 2 tbsp. olive oil
  • 9 oz. smoked salmon, uncut
  • 10 tbsp. of crème fraiche
  • 2 tbsp. chopped dill
  • Salt and pepper to taste
  • 6 ramekins

Directions

  1. Heat the oven to 350 F.
  2. Chop the smoked salmon and mix in with the cream cheese, dill and eggs. Season to taste with salt and pepper. Reserve in the fridge.
  3. Brush the ramekins with olive oil and line the base of the ramekins. Pour the cream cheese mix to the top and arrange in a baking or roasting pan.
  4. Add water to the bottom of the roasting pan and place in the middle rack of the oven. Bake for 30 minutes. Once done, remove the ramekins from the pan and allow to cool.
  5. Mix the crème fraiche with dill, and season with salt and pepper.
  6. Unmold the ramekins and top with a hefty tablespoon of crème fraiche sauce. Garnish with fresh chives.

A: These are individual, appetizer-type portions, so a small ramekin - 3 or 4 oz - should work.
