Caveman Blue Cheese
Caveman Blue is a full flavored and complex blue cheese made in Oregon. It's sweet, fruity, and has subtle vanilla notes, hints of beef and bacon, and slightly grassy. The texture is buttery, with crunchy crystals, the pate firm with a natural rind, and lots of blue mold development. It's aged from 6 to 12 months. Pair with big bodied red wines like Zinfandel, Cabernet and Port, or with a strong stout or barley wine.
