Corsican Clementine Compote, Frozen

This Frozen Corsican Clementine Compote by Ravifruit is an ideal ingredient for professional pastry chefs. Clementine Compotes have the fresh sweet citrus taste and juicy meaty texture of fresh clementines. This Frozen Fruit Compote is made by cooking fresh fruit pieces with sugar syrups until the mix is well blended, evenly flavored, and of the proper soft almost jelly-like consistency. Compotes are delicious as desserts by themselves with a whipped cream garnish; and are also useful as an ingredient in pies, cakes, pastries, tarts, ice cream marbling, sorbet, and other sweet dishes. They can be enhanced by the addition of a fine liquor or culturally specific alcohols like rum or brandy.

Corsican Clemintines are PGI certified, meaning they have a “Protected Geographic Location” (also known as IGP, “Indication Géographique Protégée”) and have been certified as grown in Corsica. Corsican Clementines are grown on the French island of Corsica, and are known for their delicate and sweet flavors achieved through careful cultivation and maintenance of the specific Corsican growing conditions: soil, agricultural expertise, average temperatures and weather, and other environmental factors. They are picked by hand with one leaf left on the fruit stem to signify freshness. Clementines originated near Algeria, in Northern Africa, as a cross-pollination between mandarines and oranges.

Frozen fruit compote should be stored at -18°C and used within two years of packaging. Once opened, the compote should be kept refrigerated and used within three days. For best results, the frozen clementine compote should be defrosted slowly in a refrigerator for up to 12 hours, though it is possible to defrost quicker at room temperature.


Ingredients: Clementines from PGI Corsica clementines (39.8%) (inc.pieces 29% and puree 10,8%), water, mandarin puree, sugar, glucose-fructose syrup, thickeners: modified starch and xanthan gum, acidity regulator: citric acid, citrus essential oils.
