Puff Pastry Croque Madame Recipe

Instead of a pancakes or waffles, elevate breakfast (or brunch!) with our flaky and delicious Puff Pastry Croque Madame made with prosciutto and gruyere cheese (although you can use your favorite melting cheese). Bonus points: you can make a whole batch at once!

Puff Pastry Croque Madame Recipe Instructions

Ingredients
  • Puff pastry
  • 1 egg
  • 1 tsp. milk
  • 4 oz. Swiss, Cheddar or other melting cheese
  • 4 slices Iberico Ham or Prosciutto di Parma
  • 4 eggs
  • Sea Salt and ground pepper to taste
  • Fresh chives, chopped for garnish

Directions
  1. Preheat oven to 400 °F.
  2. Cut the puff pastry in 4 equal squares
  3. Lay evenly apart on an oven cooking tray/ pan with parchment paper and prick the center with a fork.
  4. Whisk the egg with the milk and brush the squares lightly, then season with sea salt and pepper.
  5. Fold each slice of ham by the middle and place on top of the puff pastry.
  6. Cover the ham with the gruyere cheese on the edges but leaving the center without cheese.
  7. Bake for 10 to 15 minutes until the edges are a little golden and starting to puff, remove from the oven and using the back of a spoon, press the center of each square to make an indent for the eggs.
  8. Crack 1 egg at a time in a small bowl and then carefully drop on top of the ham. Repeat for each one. Season with salt and pepper and bake for 8-10 more minutes until the egg white is just set.
  9. Remove, garnish with chives and serve immediately.
