Known as a "frijol" in Spanish, the pinto is a lively little mottled bean, called pinto after the breed of horse with similar markings. This is the bean used for refried beans, so essential for Mexican cuisine, or whole for burritos or hearty chili. A fat-free food, it is filling and versatile. Soak in water for about 3 hours prior to use, drain and rinse.
