Sunny and bright, these sweet and citrusy lemon bars are just about perfect. This classic treat is beloved by both adults and children, and makes the perfect homemade food gift when wrapped in pretty paper and string.

Perfect Lemon Squares Recipe Instructions

For the Crust
  • ½ cup cold butter, diced
  • 1 ¾ cups plain flour
  • ¾ cups powdered sugar
  • 3 tbsp. water

For the Filling
  • 4 medium lemons, zested
  • 3 eggs + 1 egg yolk
  • 1 cup white sugar
  • 1.5 oz. flour
  • ¼ cup powdered sugar, for dusting

Directions
  1. Heat oven to 375 F.
  2. Line the bottom and sides of a 9-inch square shallow baking pan, overlapping the edges.
  3. Mix the butter, sugar and flour in a food processor, pulsing until the mix looks like fine crumbs.
  4. Press the mix into the bottom and the walls of the pan, using the back of a spoon or a small rolling pin to get an even crust – it’s very important to get a good height to make sure the lemon filling doesn’t slide under the dough.
  5. Bake for about 15-20 minutes, until just slightly browned.
  6. Remove from the pan, and set aside.
  7. Zest the 4 lemons finely, and reserve.
  8. Start your filling: In a bowl, mix the zest of 4 lemons with the white sugar and flour with a fork. Juice 1 lemon and mix with eggs and yolk. Use a medium wire sieve to sieve the egg mixture into the bowl and whisk until well combined.
  9. Lower the oven to 350 F.
  10. Pour the mixture into the crust and bake for about 20-22, until the filling just set.
  11. Remove from oven, cool in the pan, then refrigerate until fully cooled.
  12. Remove from the pan and sift the powdered sugar, cut into squares or bars.
