Pecorino Toscano is truly a Tuscan mainstay and is produced, per regulation, the same way as it has for generations. Boasting a DOP (Denominazione di Origine Protetta or Protected Designation of Origin), this cheese is carefully supervised throughout its production to ensure that all cheeses that are called Pecorino Toscano, truly deserve it. This sheep’s milk cheese is semi-hard with a firm, compact texture. As with most sheep cheese, the aroma is pleasantly herbal and each bite is rich and full of nutty flavors. You’ll also find delicious notes of butterscotch.
The process of creating true Pecorino lies in both the ingredients and the process in which it is produced. The milk comes from sheep that are raised near Toscana and some areas of Lazio and Umbria. These sheep must also eat hay and fodder only that come from the same area. The milk is curdled between 33°C and 38°C and rennet is added. Once the mold of the cheese is formed salt is added for half a day, and then begins the aging process. Pecorino blocks are aged for six months and finished with a yellow rind - the deeper layers of the cheese are white. Once complete, the cheese is checked one last time before being marked as DOP.
Pecorino Toscano – DOP is used in a variety of Tuscan recipes and can be grated on most pasta dishes and risottos - the classic uses for Pecorino! Shave over fresh salads or over soups. It also serves as a great table cheese as well. This cheese works great on cheese boards when paired with nuts, jams, honey, or dried fruits, particularly figs. Aged Pecorino like this one is best paired with heavier red wines.
