Gelatin Leaf Sheets - Bronze
Gelatin is one of the most common gelling agents (ie. an agent that transforms liquids into solids), and gelatin sheets are the kind favored by professional chefs and restaurants. They can be used for both sweet and savory preparations, including gelatin desserts, candy, mousses, yogurts, puddings, cakes, glazes, creams, or even salads, soups and savory sauces.
Gelatin sheets are graded based on their bloom strength, meaning their ability to set a gel. The label "Bronze" denotes sheets with a bloom strength of 125-155. Since this is on the lower end of the bloom spectrum (with "Gold" offering around 200 bloom strength and "Platinum" offering around 250 bloom strength), Bronze tends to provide a more tender, delicate texture compared to the firmer results of the higher blooms. However, Bronze and Silver sheets are the most commonly used grade of gelatin sheets in the baking industry, because they can also provide a firmer-textured gel if dosage is appropriately increased. In other words, though "bronze" may imply lower quality, it's actually incredibly versatile and can provide the same results as other grades.

Directions: soak the sheets in cold water for around 8-10 minutes or until softened. Drain, warm up until melted, then carefully incorporate the melted gelatin into your recipe. Generally, 12 to 15 gelatin sheets gelifies 1 liter of preparation.
