Pork Liver Mousse Pate
Leave the classic duck foie gras and take a bite out of this amazing Pork Liver Mousse by Olympia Provisions. Rich and creamy, like all great mousse should be, this smooth concoction of pork liver is sweetened with port wine, seasoned with piquant pepper and chili flakes, spiced with coriander, and then topped with succulent rendered pig fat.
Serve with bread, a drizzle of extra virgin olive oil and a touch of sea salt. Gorgeous.
