This duck breast comes from the Muscovy Drake, the male duck, which means its bigger than the hen. This is dark meat all around, with a gorgeous reddish hue and a superb juiciness that you won’t be able to resist. Perfect for pan-searing, baking or even for grilling, always yielding juicy results, never dry. Make sure to score the duck breast first so the fat renders away, and then cook it slow and easy to fully develop the flavors. We source our duck breast from Grimaud Farms, in California. They’re based in the San Joaquin Valley, where they raise their top-quality birds which they import from France, under human and natural conditions. This duck is antibiotic, hormone and steroid free, fed a balanced diet and allow to mature slowly.
