Sbrisolona Italian Cookie

The top part of Sbrisolona (pronounced Sbrih-zoe-LOAN-ah) is almost like streusel crumble but with a lot more crunch. This Mantovan delicacy has it roots on a peasant dessert from the 16th century, made with flour and cornmeal, a simple treat that’s meant to be broken into craggy pieces and shared with the family and friends at the end of a meal. Besides the traditional pairing of espresso, you can also try it with vin santo, or a sweet dessert wine like grappa.
Our Sbrisolona comes from the oldest bakery in Mantova, run by the Freddi family, since 1923. The recipe they use at Panificio Freddi includes all natural ignredients and is free of preservatives.
