Ombra by Mitica is a Spanish sheep’s milk cheese that tastes like no other. This cheese is full of milkiness and integrated salt to start and finishes with butterscotch and citrus notes. Many compare Ombra to a Parmigiano made with sheep’s milk though the texture is much more tender.
Cheesemakers age Ombra for four months in a small wheel format that creates a gray rind and allows the cheese to quickly develop crystallization. Ombra is produced at the Fromatges Can Pujol located just 5 miles from the Mediterranean Sea where locals know the cheese as Ros. Master Cheesemaker Josep Cuixat has produced this sheep’s milk cheese since the early 1990s, so he’s had plenty of time to perfect his unique recipe.
