Fabulous Canadian vinegar, Minus 8 is so-named for the icy temperatures during which the grapes are harvested. The vinegar starts as “ice wine”, made from a secret blend of 8 varieties of red and white grapes, picked at -8 degrees Celsius in the Niagara region of Ontario. The wines are aged in French oak barrels, and the vinegar process follows the complex Solera system. Minus 8 develops concentrated and complex flavors, deep sweetness and a great balance of acidity. Richly flavored and utterly luxurious, Minus 8 is perfect with venison, foie gras, deglazed in a sauce, vegetables and other savory dishes.
