Raised sustainably and harvested in the Aquitaine region of Southwest France, from prime stock of Acipenser baerii, also known as Osetra caviar for the similarity to this fine caviar.  The conditions at the caviar aqua farms mimic those of the Siberian rivers, the native environment of this large fish.  With large and glossy dark grey pearls, French Siberian Sturgeon caviar delivers a nice firmness and pop, a smooth and buttery texture, and hints of sweetness and lingering earthiness.
