Brebirousse
Cut open Brebirousse and it almost seems like the milky white cheese is trying to escape from it's orange, confining rind. This cheese is so soft and creamy it virtually oozes out, melting enticingly out the sides. Sheep's milk cheeses are as a rule pretty intense, so it's a pleasant surprise to find how milk and "unsheeplike" Brebirousse is, while still retaining a nice aroma. Comparable to a Brie in texture, serve a small amount on crackers or thick bread, to savor the flavor fully. In order to contrast the rich, long-lingering finish, pair with the driest and crispest white wine you can find.
