Conchiglie Rigate
Conchiglie is named for it's distinct shape - conchiglia means "seashell" in Italian. It's a fun pasta to serve, and the "pockets" of the shell acts as a sort of cup, catching the sauce. This means that when serving Conchiglie you have to pay out most attention to the sauce you'll be pairing it with, since the flavor will be predominant. Try a light tomato sauce, a rich smooth ricotta or a fresh pesto, as well as roasted vegetables like asparagus or zucchinis.
