Named after an historic road that once brought settlers to Greensboro, Vermont (where the cheese originates), this raw cow's milk cheese has a dense and luscious texture comparable to fudge. But don't expect a whole load of sweetness here: traveling this road will be a nutty, tangy, spicy affair, over firm yet creamy paste potholed blue with notes of licorice.
As for how to enjoy it? Taking the high road, you'll sprinkle it lightly over a spinach salad alongside walnuts and berries, a glass of red wine perched in your hand.
