Gourmino Gruyere won "Best Cheese of the World" at the 2008 World Cheese Championship. Made using the best mik of Brown Swiss cows, this delicious gruyere is aged for 12 months, developing rich, complex flavors. The flavors of toasted nuts, caramel, and a fresh floral quality is perfect for fondue while the cheese itself melts incredibly well.
Raclette, from the French word "racler", meaning to scrape, is an alpine cheese that's used for melting much like a fondue. And while you can melt this cheese like fondue, it is traditionally melted over a hot grill. Reading Raclette is made in Vermont with the milk of Jersey cows at Spring Brook Farms. It is smooth and pliable, the pale buttercup yellow paste studded with eyeholes. It has strong flavors of butter, and pronounced nuttiness.
Everton:
From Jacobs and Brichford, a small Indiana dairy, Everton is a Gruyere-style Alpine cheese that's a bit milder than the original, with grassy and meaty notes. It's perfect for fondue, or to pair with smoked salmon on a cheese plate. It's made from raw cow's milk, aged for 8 months, growing sharper as it ages. Firm, creamy and flavorful.
