Fusilli Rigate
Fusilli is a small, corkscrew-shaped a specialty of the Campania region. They have a spiral shape, developed long ago using a traditional method in every Italian household, by twisting a spaguetto around a knitting needle with a swift and confident movement of the hands, like a spinning machine. The word "fusillo", as a matter of fact, comes from "fuso", spindle or rod typical of knitting. Fusilli are great with thick and hearty ragu sauces, ricotta, and vegetable-and-tomato sauces.
