French Lavender Honey

Honey can take on specific flavors if the bees are guided to harvest nectar from all the same kind of plant (called mono-florals). This French lavender honey is honey made from the collection of nectar from lavender fields in bloom. It has a fresh and light mild floral flavor, fruity, and without bitterness. The color is typically a lighter golden amber, and the consistency is naturally creamier than some other honeys that are commonly more liquid.

French lavender honey is especially delicious drizzled over fruits like figs and raspberries, and as an ingredient in lemon pound cake, pumpkin bread, candied yams, and gingersnaps. The lavender and honey flavors compliment many rich foods.

If preserved well, in a sealed container, honey can last for years. Eventually the honey will crystalize and harden. Even at this point the honey is still useable. Simply heat the honey jar gradually in a hot water bath until the honey regains its original color and liquid texture.
