These luxurious foie gras tartlets look and taste beguiling but are a breeze to prepare; plus they’re small, so you can enjoy them guilt-free! A creamy fusion of foie gras and mascarpone cheese is captured in sweet-tasting tart shells, then topped with fig spread with balsamic and port wine…a very attractive proposition indeed!

Foie Gras and Cheese Tartlets Recipe Instructions

Ingredients
  • 8 oz mascarpone cheese
  • 6 oz micuit foie gras
  • 30 mini sweet round tart shells
  • 30 Fig spread with balsamic and port wine
  • Pastry bag and open star decorating tip

Directions
  1. Whip the mascarpone in a large bowl with a hand mixer for around 2 minutes, until the cheese has a light, fluffy consistency.
  2. Slice the micuit foie gras into small pieces, and mix it into the mascarpone with the hand mixer, whipping for another 2-3 minutes or until the entire mixture is light and fluffy.
  3. Using a spoon, add a touch of fig spread to the bottom of the tart shells, filling around a quarter of each shell’s height.
  4. Turn your pastry bag inside out and fill it with the mixture of whipped mascarpone and foie gras.
  5. Gently spiral the mixture onto each shell starting from the edge and working inward to the center, pulling up with a small flick to finish.
  6. Add a small amount of fig spread onto the top of each tartlet.

A: Foie gras can be subbed with chicken, duck or turkey liver. For this recipe, you really need foie gras though.
