San Joaquin Gold

An original cheese from Fiscalini Cheese Company (famous for their aged cheddar), San Joaquin Gold is a rich, raw cow’s milk cheese that was born to be Fontina-type but instead become a cheese unlike any other: a bit like Fontina, a bit Cheddar-like, notes of Parmiggiano…all in a fabulously buttery cheese with a granular texture, and complex, caramel flavors.

Fiscalini San Joaquin Gold is studded with mouthwatering protein crystals, so characteristic – and beloved – in great aged Goudas and cheddar. It’s a cheese that evolves as it ages, becoming more deeply flavorful and complex. Buttery and smooth, sweet and salty, nutty and just incredibly delicious, San Joaquin Gold cheese is perfect on its own paired with a crisp juicy apple and some nuts, yet versatile and mellow enough to be a great addition to any cheeseboard, an amazing option for a grilled cheese, and even fantastic when grated on a salad.

Established as family dairy in 1914 in Modesto, California, Fiscalini Cheese Company is one of the most respected creameries in California, still overseen by the Fiscalini family. They specialize in handcrafted, artisan cheeses that consistently win awards, especially their bandage-wrapped Fiscalini Cheddar, an old-fashioned, English style cheddar produced using the sweet milk from their very own Holstein cows.
