Edmond Fallot roughly mills the mixture of black and brown mustard seeds, wine vinegar, spices and flavorings without sieving in order to keep the seeds whole and give their mustard that great texture. They use traditional mill stones for the process, which doesn’t overheat the seeds, making a for a full-flavored mustard.
