Etorki is a smooth, velvety cheese from the French Basque country packed with rich and sweet flavors with subtle notes of hazelnut and caramel. This cheese is earthy and sweet to the nose and has dense texture in every bite. Etorki has a natural rind with an interior paste that is ivory in color. Occasionally, holes or slits will form.
The process to make Etorki follows a 4,000-year-old tradition which makes sense considering Etorki means origin in Basque language. Cheesemakers source milk from ewes raised by local shepherds and farmers, and the cheese is pressed but never cooked. Then, it slowly matures over the next three to six months. The result is a bumpy rind that forms during the pressing stage, but the flavors are superb.
Try this cheese with quality ham or charcuterie. It could also feature well with an assortment of rich cheeses on a board. Dark fruit jams and compotes pair well with Etorki along with fresh-baked bread. Try rich red wines or a chardonnay to compliment the earthy and sweet aroma in the cheese. However, sparkling Basque wine would be the traditional choice pairing.
