Made using raw goat’s milk, this exquisite cheese is brought to you by a small farmstead in Vermont, USA. It has a firm texture that remains smooth and exceptionally rich in flavor, with lovely notes of vanilla, salted caramel and browned butter.
Taking its name from the region its from, every wheel of Danby cheese is aged for a minimum of 6 months. This allows for its pure, dense white paste to develop and all of its intense flavors to mature. It is made in a barn that was built in the 1900s using only sustainable farming methods to ensure that waste is minimal and quality optimal. They are Certified Animal Welfare Approved, meaning the health and safety of their animals is top priority.
Danby is a fine cheese to enjoy on its own – especially accompanied by some dried fruit or specialty meats, like salami. It is also ideal for grating over pastas and risottos. Serve with crisp white wines like Sauvignon Blanc, Albarino or Pinot Grigio as their acidity makes sure that one does not overpower the other.
While Consider Bardwell Farm was originally established in 1824, it was only started up again less than 20 years ago by a couple merely looking for a second home in the country, but found a passion in cheesemaking as well. In 2005 they were only milking 30 goats on the quaint farm; now they have expanded from one aging room to 5, with no signs of stopping soon!
