Chimay with Beer - AOC
Warning: not for the faint at nose! This is an INTENSE cheese; right away you'll notice the pungent, bold aroma, with hints of bitter hops and earthy nuts. Chimay is washed with the famous Chimay beer every few days, giving it a distinct "malty" flavor. It is firm, but also quite thick on the mouth and lingering. This cheese is made in Belgium in a Cistercian Abbey by trappist monks - who also make the beer! Bring to room temperature before serving, but don't let it stay out too long, else risk impregnating the whole room. Try pairing with any Belgian beer.
Ingredients: scalded cow's milk, slat, coagulant, Lysozym, hops, annatto (E160), lactic acide bacteria.
