St. Nectaire
A very traditional cow's milk cheese from the region of Auvergne, St. Nectaire is a classic monastery, cloth-bound, cellar-aged cheese. It's firm without being hard, relatively young, mild and fruity, with hints of nuts that comes from the rustic, brine-washed rind. A French affineur that took America by storm during the 80s and later took over her father's French operation, Chantal Plasse specializes in French traditional cheeses, while constantly innovating and creating new delicacies, both in America and in France.
