Wafer Flakes (Paillette Feuilltine)
These irresistible wafer flakes, or Paillette Feuilltine as the French call them, are crispy, thin, tasty shards of sugar cone and found in most professional kitchens. They are made of broken pieces of crepes dentelles, which are dried, caramelized crepes that are rolled into a cylinder.
Our delicate wafer flakes are wonderful for adding texture to dishes as well as flavor - mix in mousse to add some crunch, use as truffle centers or sprinkle onto cake fillings between the layers. Serve them scattered over ice cream or flavoured cream to create a deconstructed ice cream cone. For an impressive display, mix in with tempered chocolate so that they’re barely coated, spread out thinly, then cool and break up to serve as crispy, chocolate tuiles.

A: The Wafer Flakes have a shelf life of 12 months. The product should be stored in a cool, dry place (68- 72ºF, 20- 22ºC), away from direct sunlight and protected from humidity. The wafer flakes should not be stored in the fridge or freezer, as they would absorb moisture and have their texture ruined as a consequence.
