Limited quantities arrive during the season and sell out quickly!
For centuries, the coveted Black Truffle, the black diamond of the culinary world, could only be sourced from two places: France and Italy. From December to March, we could savor the lusciously aromatic tuber Melanosporum truffle, while we prayed for cold temperatures and enough rain to make these elusive mushrooms grow.
Fast-forward to about 1999, when enterprising foodies from Australia discovered that taking Perigord truffle spores (their seeds, for all intents and purposes), and inoculating them on oak tress in the Tasmanian region, resulted in fabulous truffles as well, with the same quality, aroma, and distinctive flavor than the French and Italian black truffles. We’re so happy to be able to enjoy these amazing truffles during the summer, instead of having to wait till the end of the year!
